Dessert Fix

So tonight, Jordan made an AMAZING dinner! It was a great twist on a recipe from Men's Health featuring tilapia, swiss chard, apples and a mysterious and delicious bacon and dijon mustard sauce served over couscous. YUM.MY. 


We had a lovely meal, and I was quite ready to settle in for a romantic night of Toy Story 3...by the way, watch it, you'll like it, trust me. However, Jordan, despite making a beautiful meal for us, was not satisfied. At 9:45pm, he decided we must stop the movie, get in the car, drive to the store, purchase a piece of cake, drive home, put the cake on a plate, start the movie, and eat the cake. What? I'm sorry, but we were right in the thick of the plot. So, I told him we could make do with what we have at home. He said we didn't have anything, and I accepted his challenge...and won. 

Very easy cobbler recipe: 


Ingredients: 
1/2 cup Blueberries (fresh or frozen) * I used frozen. 
1/2 cup Sugar 
1/2 tsp. Vanilla
1 cup Bisquick
1/2 stick Butter, softened
1/2 cup milk

Instructions: 
Preheat oven to 350
Fill ramekins 1/2 full with blueberries
Mix sugar, vanilla, Bisquick, butter and milk together. 
Spoon mixture over berries, bake for 25 minutes

This made three ramekins of cobbler, or you could use a small baking dish. 

Thank you, Jordan, for challenging me to bake a dessert with what we have at home. We will now have a serious talk about your dessert habits before your cake runs and my late night baking take a turn for the worse. If we don't stop the madness, it will be the end of my waistline. But it was a good cobbler...
